Food allergies can be caused by all food products, but in Europe the risk is considered to relate primarily to the food allergens listed in Annex II of Regulation (EU) No 1169/2011 of the European Parliament and of the Council of 25 October 2011 on the provision of food information to consumers.
Food manufacturers in European countries are obliged to inform consumers about the content in a product of any of the list of 14 ingredients that most commonly cause food allergies or intolerances. The mandatory declaration of allergens only applies to ingredients in the food product. The problem remains with allergenic substances that represent contamination from, for example, the production line. Being aware of such a situation, it is necessary to plan and implement procedures to ensure that allergens do not inadvertently enter the finished product.
